Afrikaans for 'red bush', rooibos seems to be a misnomer for the gorse-yellow brush that ornaments the Western Cape's scrubby heathland. But after treatment its leaves turn auburn, and this rich rust colours a sweet, full-bodied and floral tea known for its versatility and bedtime suitability. Here, that unmistakable rooibos flavour is embellished by milky caramel tones of vanilla rising from the steaming cup.
